White Bean and Greens Soup
There are only a few more soup days remaining before I will likely not want to make it again until the weather cools off in the fall. I love soup because it feels nourishing and sustaining, but also because I can clear the fridge of any produce that needs to be used up. In this case, I specifically wanted to make something light and springy to counteract some of the heaviness that I tend to feel in spring.
It really is amazing to see the Ayurvedic principals that I’ve studied play out in life. I am noticing that this spring, as Kapha dosha becomes predominant, I am more prone to get a little congested, feel more tired than usual, and feel generally heavier in my body. I can then eat foods that balance Kapha (such as this soup with beans and greens), get more active (like riding my bicycle or taking walks), and changing up my routine to include more invigorating asana and pranayama.
Life really is a beautiful play of energy and if only we pay just a little bit of attention, we can work to put energy where it is needed to create balance and harmony.
This white bean and greens recipe is a great one for the last cool days of spring. I enjoyed my bowl of soup with some avocado, a drizzle of olive oil, and some freshly baked bread. It would also be nice eaten with a grain, if you prefer. I hope you enjoy!
