Herby Farro Salad
Salads are not really a thing in Ayurveda, traditionally. We mainly like to recommend cooking the foods we eat in order to maximize their digestibility. For instance, if we eat a big bowl of raw kale salad, we may hear our tummies start rumbling shortly afterwards because it takes quite a bit of effort to break down kale’s fiberous leaves. On the other hand, if we sauté the kale in a little oil or ghee with some digestive spices such as ginger, cumin, or hing, it becomes much easier for the body to break down and assimilate.
If you are currently experiencing delicate digestion, then you may want to wait on this recipe as it is very nourishing and wholesome, but there is raw celery, walnuts, and herbs included making it better for the times when agni (our digestive fire) is going strong.
That being said, this simple farro salad checks all of the boxes for me when it comes to an easy and wholesome meal. Balanced, substantial, simple, and delicious.
If you’ve never eaten farro before, I encourage you to give it a try. It is chewy, nutty, and holds up well in dishes such as this one (making it a great picnic food). Enjoy! :)
